Gail's Cake Pantry are a wedding cake specialist based in Erwood, on the banks of the river wye close to Brecon Beacons and the market town of Hay on wye, Powys/Herefordshire border.
The artist behind these sugary masterpieces is Gail Jackson she grew up surrounded by family members who were all involved in the baking industry. This inspired her to specialise in creating mouth-watering traditional and novelty cakes for weddings and other special occasions. She uses the finest local ingredients and designs each cake to reflect the personalities of her clients.
Services Offered
Every cake designed by Gail is custom made with you in mind. She will draw from your inspirations, personality, and wedding themes to craft your bespoke cake. Your choice of delicate handmade sugar flowers, dried or fresh flowers can be used in the creation of your personalised cake. Each cake is handmade to order with large menu of delicious cake flavours, ensuring that your wedding cake is everything you ever imagined.
We also offer wedding favours, traditional welsh cakes, shortbread & cookies to compliment your cake.

Everyone loved the cake.
Gail was fantastic all the way through the planning process. The cake was absolutely gorgeous. All of the guests complimented on how tasty the cake was too. We highly recommend Gail‘s Cakes.

Absolutely phenomenal!
I don’t think I can put into words how amazing our wedding cake was, we were blown away when we spotted it after returning from our ceremony (and it even got its own round of applause when we revealed the secret Lego section!). It looked, tasted (and is still tasting) phenomenal. Gail has been a dream to work with from start to end and I could not recommend her more highly!

The Perfect Wedding Cake
The wedding cake was absolutely stunning and tasted even better than it looked! Every layer was moist and flavourful, and it was beautifully decorated. It was the perfect centrepiece for the special day.
We sent photos to Gail of the type of cake we were looking for and also tasted several flavours before deciding on the 3 we wanted.
Gail was very easy to deal with and responded quickly to all enquiries. She delivered to the venue and set up the cake on the day. Highly recommend!

Amazing Cakes!

Our wedding perfection
Gail had spent time with me prior to wedding to see what we wanted for our cake. She showed us some cakes she had done previously and went through flavours, decorations etc and gave us several to take home and try. On the day I asked her to arrive within the hour of reception so they were not standing around long with other people there. She laid the cakes out so lovely. She was so professional and they were so beautiful. I would never hesitate to ask her to do another cake for me as there was nothing to much trouble for her. Thank you Gail. My day was perfect.

Dream bespoke cake
Everything from the moment I got in touch was made so easy with her professionalism, my daughter had seen two cakes and she loved both and being a very personal cake for them, the cake turned out better than could be expected, even putting us I.n touch with a lady who made the figures, price was very reasonable and organising the cake to delivery to the venue was seamless the cake was so beautiful and moist and definitely the center piece my daughter had wanted,highly recommended

What can I say!!! Gail is phenomenal at her job I’m so glad (and very lucky) I was able to book Gail to make our wedding cake! Nothing is too much for Gail she made my wedding cake dreams come true!
Everybody loved the cake at our wedding I had to hide some so we could keep it for a later date.
The lime and coconut was a firm favourite with our guests.

Fantastic cake and a wonderful company.
Gail was lovely to talk to from start to finish. Responded quickly to all messages and questions we had and was happy to accommodate our budget. The samples were sent quickly and the flavours stunning. We had difficulty choosing our favourite 3. The cake was set up perfectly for the reception and was a huge hit with the guests. We cannot thank them enough for making the process so easy and delivering everything we wanted. We highly recommend Gail’s Cake Pantry!
