Gail's Cake Pantry are a wedding cake specialist based in Erwood, on the banks of the river wye close to Brecon Beacons and the market town of Hay on wye, Powys/Herefordshire border.
The artist behind these sugary masterpieces is Gail Jackson she grew up surrounded by family members who were all involved in the baking industry. This inspired her to specialise in creating mouth-watering traditional and novelty cakes for weddings and other special occasions. She uses the finest local ingredients and designs each cake to reflect the personalities of her clients.
Services Offered
Every cake designed by Gail is custom made with you in mind. She will draw from your inspirations, personality, and wedding themes to craft your bespoke cake. Your choice of delicate handmade sugar flowers, dried or fresh flowers can be used in the creation of your personalised cake. Each cake is handmade to order with large menu of delicious cake flavours, ensuring that your wedding cake is everything you ever imagined.
We also offer wedding favours, traditional welsh cakes, shortbread & cookies to compliment your cake.

Gorgeous cake
Gail was so friendly and helpful from the moment we got in touch with her. Listening to what we wanted and offering advice when we asked for it, she was always so helpful. Our cake looks exactly as I pictured it, and tasted so delicious that many of our guests said it was the best Victoria sponge cake they'd ever had. Would 100% recommend Gail if you are looking for a wedding cake.

We loved our cake
We chose a to tier cake, with a different flavour per tier. Lime and coconut for one and raspberry and white chocolate for the other. We asked for a semi naked cake, decorated in colours to match our wedding - gold, green and white. This is what Gail provided. We paid for delivery to our venue, Craig Y Nos Castle, where Gail worked with the wedding team to get it all ready for our photographs. The cake was cut and served as part of our evening buffet - loads of people commented how lovely it was. Overall very happy with the quality of the finished product.

A summer wedding of fun
We had an amazing experience with Gail and the cake was absolutely gorgeous. We went in with an idea of what we wanted to fit in with our theme and Gail and the team really did deliver.

Just wonderful!
We had the most wonderful experience working with Gail. She was incredibly helpful, and the cake was absolutely beautiful and so delicious. She also made the most delicious welshcakes for our welcome bags - a big hit, too! Thank you Gail for helping to make our day just perfect.

Beautiful Wedding Cake
Our naked wedding cake was exactly as we asked it was stunning but it tasted even better than it looked! Would 💯 recommend Gail's Pantry for weddings birthdays anniversaries... any excuse quite frankly to have a cake from Gail haha!

Delicious and beautiful cake!
Gail made us the most delicious red velvet cake for our wedding day! It looked beautiful- it was 3 tiers and had a semi-naked finish. Gail arranged flowers from our florist and we rented a log stand from her, and the finished result was perfect!
Gail was very friendly, helpful and professional throughout our planning process. We are very grateful to her for helping to make our dream wedding cake!

Delicious!
The cake was beautiful and tasted even better! Everyone enjoyed it and had so many compliments, the cake itself was so moist and it just tasted incredible.

The best supplier that we hired
Gail's bakery absolutely smashed it out of the park with our wedding cake. We had lime and coconut and lime and poppy seed for our two tiers and all of our guests and me and my partner absolutely loved it!! Only thing we were sad about was when it finished.
The planning process was also fantastic, with being able to do cake tasting while not in Wales (we were able to get the mini taster slices posted to us) and having great communication with Gail. Also very good value for money compared to a lot of other cake places! Gail also came in early before the wedding to help decorate the cake with our own flowers and did so in such a fantastic way. Would definitely recommend.

Fantastic cake, tasted amazing!
Our cake was beautifully made and tasted amazing!! Gail moved before our wedding however she still went out of her way to make and deliver our cake. I would highly recommend Gail’s Cake Pantry!

Just fabulous!
Gail was just fabulous from the start nothing was to much trouble for her she prepared and delivered a selection of tasters for us- which were all amazing!
We chose three different flavours lemon and poppy seed, coffee and finally a tier of chocolate.
All tiers were so moist and tasty.
We wanted to incorporate in some way our favourite cake- caterpillar cake.
Gail made two bespoke caterpillars for us as cake toppers.
We opted for the ‘naked effect’ cake as we like simple, she also kindly added some simple flowers to each tier.
The cake looked fabulous and tasted just amazing!
