At Vamos Paella, they believe that food isn’t just nourishment, it’s a way of bringing people together and creating moments that last a lifetime. Since 2011, they have been doing exactly that, crafting unforgettable events centred around colourful, vibrant, and flavour-packed Spanish cuisine.
Founded by Melissa and now run by expert chefs Chan and Dan, both of whom have been part of the Vamos Paella family since 2020. The business has grown with a strong reputation for unforgettable food and exceptional service. They take on a maximum of two events per day, ensuring that one of the owners will be present at each celebration to make sure every detail is just right.
Cuisine
Vamos Paella prides itself on using only the highest-quality ingredients to create dishes that are as authentic as they are delicious. Fresh produce is locally and ethically sourced, while their rice, cured meats, paprika, and olive oil come from Brindisa, one of the UK’s most respected importers of premium Spanish foods, guaranteeing bold, vibrant flavour in every bite.
Their menus offer a wide range of paellas to suit all guests, with plenty of flexibility to mix and match dishes. The paellas are ideal for vegans, vegetarians, pescatarians, and meat-eaters alike, and they work brilliantly for those with dietary requirements as they are gluten-free and most are dairy-free. They also offer an extensive selection of tapas, including colourful sharing meat and cheese boards for a relaxed, sociable style of service. For evening food, unique options such as cheese towers and chorizo hotdogs mean there is no need to bring in additional caterers.
Services Offered
Whether planning an intimate gathering for 50 loved ones or a large-scale wedding for 500 guests, Vamos Paella caters to all occasions. Chan and Dan have created delicious menus featuring signature canapés, sharing tapas, hearty paellas, and indulgent desserts. From wedding breakfasts and cocktail parties to evening receptions, their expert team is on hand to serve guests in style.
The team brings their own plain black 3m x 3m gazebos to cook under, along with serving tables. Their setup is fully self-sufficient: gas burners run on propane, and battery-powered lighting ensures smooth evening service, meaning couples don’t need to worry about power access. They arrive around three hours before service to set up and prepare everything fresh on-site.
They can also supply experienced staff to manage all asprects of the food and drink service, from serving canapés and reception drinks to running the bar throughout the evening. In addition, they provide a competitively priced range of catering hire, including crockery, cutlery, and glassware, ensuring couples have everything they need for seamless service.

Tasting Events
Vamos Paella hosts tasting events twice a year. The next sessions will take place on 21st March from 4–7pm and 22nd March from 1–4pm in Central Brighton. These events have received outstanding feedback, with many couples sharing how much they enjoyed the experience in their reviews. Come and meet us face to face and try a large selection of our menus, from canapes and tapas to paella, salads, breads and then dessert. This really is an event in itself. The tasting day is free for anyone who has already booked or it costs £25 per person if not.
Meet the team
With over 20 years of culinary experience, I began my career in London, where I had the privilege of cooking for celebrities and royalty. During my time as a chef at Coutts bank, I was honoured to cook for the late Queen Elizabeth II. My passion for food and dedication to exceptional service have been the driving forces throughout my career.
In 2020, I joined Vamos Paella, where I found a perfect home for my love of vibrant, fresh cooking and shared dining experiences. In 2024, alongside fellow chef Dan, I proudly took over the business, continuing its mission to bring authentic paella and memorable catering experiences to events across the region.
I have been cooking ever since I left school, With over 15 years of culinary experience, I began my career in Brighton, where I had the privilege of working in some of the best restaurants in the city. Starting my own business in 2016. I joined Vamos Paella in 2021. In 2024, alongside fellow chef Chan, I proudly took over the business, continuing its mission to bring authentic paella and memorable catering experiences to events across the South East and beyond.
