The trailer is the experience. The pizza is the proof.
Brooklyn Pizza & Co. runs out of Glasgow. Airstream trailers in dark petal grey, a small team, dough made in house and slow proved.
The trailer takes its place where your guests can see it. Hatch open, ovens lit. Twelve-inch New York style pies cooked one at a time, blistered at the edge, cut on the board and handed over hot.
Guests gather at the hatch and drift back for another slice. Everyone ends up in the same spot, talking, holding food. It photographs well.

Meet the team
I'm Ollie, founder of Brooklyn Pizza & Co.
The idea came from watching what happens when good food turns up at a party. People put their phones away. They queue, they talk, they go back for another slice. I wanted to build a company around that moment.
So we keep it simple and do it properly. Dough made in house, slow proved, twelve-inch pies cooked to order at your venue. I run the trailers out of Glasgow with a small team, and on the day you'll find me at the ovens.
