O/t nice biscuits that don't need eggs?

    G & I both have colds and it's snowing so I was going to bake some biscuits with her to try and keep warm and wean overselves off Cbeebies. But we're out of eggs.  and milk.

    are there any good recipes we can try out, or do I have to get dressed and go to the shops?

    I have a simple shortbread recipe which needs plain flour, butter and sugar.  

    250g Flour

    75g sugar

    175g Butter

    Mix the flour and sugar, add the butter and rub into the flour & sugar.  Then knead into a paste.  Roll it out, cut into desired shape and then bake at 180 degrees for approx 15 minutes.

    smarties cookies

    100g softened butter
    100g light muscovado sugar
    1 tbsp golden syrup
    150g sr flour
    85g smarties

    beat butter and sugar together until light and creamy. beat in syrup. work in half the flour, stir in the smarties, then the rest of the flour

    divide into 14 balls, and spread on a baking sheet. bake for 12 mins at 180c

     

    (you can put other things in besides smarties)

    OOh thanks.  Might have a go at the smarties ones, although I'll have to stop G eating them when we're making them.  I was hoping to do ones we could cut out with shapes, so these might be good

    Obviously this doesn't help you now if you have no milk, but for any baking you can replace one egg with a dessertspoon of golden syrup and a quarter of a cup of milk. My lifesaver - I regularly get halfway through a recipe and discover we have no eggs!

    This is such a great idea!! Can I substitute margarine for the butter? I've got a shed load of Stork margarine in the fridge, but no butter (used all the butter making two Christmas cakes!!)

    Cheers all.  We ended up making chocolate melting moments as we had that one in a book and I didn't fancy leaving G in the kitchen while I can back to check the recipe.

    We also had to top up the butter with stork.  I really MUST go shopping when I have the car tmw.

    And thanks for the egg tip lizzyJ, will try to remember that - does it work with cakes too?

    Also PSA - baking with a toddler seems to mainly involve stopping them eating the raw mix.
