  • Cake recipes anyone?

    I am doing a tea party for Evie's 3rd birthday, really smal with just a couple of friends and mostly family as our garden is soooo tiny now!

    Does anyone have any ideas for cakes i can make? the easier but more effective the better?

    Also what about sandwich fillings? For adults and children alike!

    I tend to do an equal meaures sponge cake.  So 3 eggs (6oz), with 6oz of cake marg, sugar and self raising flour.  It makes a lovely light sponge cake or nice cupcakes.

    I do the same as Angeldust, but with 8oz's of everything instead and just do a nice jam or vanilla butter icing filling. 

    Sandwich filling wise - ham, cheese, egg, tuna are always popular.

    The easiest cake I have ever made is lemon drizzle cake (if you want non birthday type cakes too)

    110g Butter
    175g Caster Sugar
    175g self-raising flour
    1 level tsp baking powder
    2 large eggs
    finely grated rind of 1 large or 2 small lemons
    60ml milk

    Drizzling Sauce
    3 tbsp granulated sugar
    juice of the lemons

    1. Preheat oven to 180 C/ 350 F/ Gas Mk 4. Grease cake tin/loaf tin

    2. Put everything (except sauce ingredients) in a food mixer and whiz until really smooth. Pour into prepared tin and bake for 40-50mins

    3. Meanwhile dissolve the sugar in the lemon juice

    4. Test cake is done by inserting a metal skewer into the centre. If it comes out clean then it's ready.

    5. Place the cake, still in it's tin, on a cooling rack and pierce all over with a skewer. Spoon over the drizzle sauce and leave in the tin until quite cold.

    For sponge

    Weigh however many eggs you want in their shells (2 eggs will do about 16 fairy cakes)

    Use the same weight of marg, caster sugar & flour.

    Mix the sugar & marg with a tsp opf vanilla, then gradually add in the flour & eggs

    If you want extra's just stir in at the end (choc chips etc)

    I bake at 200 c for about 15mins - til they spring back when you touch them

    I've got a LOT of cake recipes that I use regularly but my brain's gone and I can't think of a single one! Laugh  Sorry!

    Would you prefer big cakes or cup cakes?

    How about rice krispy cakes with a little mini egg inside?  Good for kids but I love them too

    I don't know the exact measurements or ingredients sorry!  But melt chocolate add rice krispies and some golden syrup until they stick together and place into little cake cases and place a mini egg in the middle and refridgerate.

    Good Luck sounds like a fab idea hmmmmmmmmmmmm cake!

    Ooo some great ideas here. I want to do big cakes i can slice and cupcakes so I can put glitter on them!!!
